Cheesy Hashbrown Potato Casserole

The family and friends always ask me to bring this dish to get-togethers. Very simple and left-overs (if there are any) are great, too! I prefer to use the crock-pot for this recipe, so that is one less item in the oven when making it for a holiday meal.
1 - 2 lb. bag frozen hash brown potatoes, thawed
1 - 2 cup package of shredded cheese, I like the Cheddar/Monterrey Jack mixture
1 - can cream of chicken soup
1 - 8 oz. container sour cream
1/2 medium onion chopped
1/4 cup - butter, melted
1 - package of stuffing, chicken flavored
3 TBSP - butter, melted
non-stick spray
Spray Crock-Pot or casserole dish with non-stick spray. In a Crock-Pot or a casserole dish mix together the potatoes and cheese. In a medium size bowl mix together the soup, onion, sour cream and 1/4 cup butter (salt and pepper, if you like). Combine soup mixture with potatoes and cheese. Top with stuffing mix and drizzle 3 TBSP butter. Cover. In Crock-Pot cook on High for, 4-6 hours. In casserole dish, cook 45 minutes at 375 degrees covered and 10 minutes without cover. ENJOY!
