Cheesy Tortilla Brunch Pie

Light and fresh, this cheesy tortilla brunch pie is also good for lunch or a light supper. Substitute low-fat or fat-free ingredients, if desired.
4 (6-inch) flour tortillas
1 cup shredded Mexican-blend cheese
1 (7-oz.) can chopped green chilies, drained
1 cup chopped sweet onion (Vidalia, if available)
1 large tomato, seeded and chopped
4 eggs
1 cup sour cream
1/4 teaspoon salt
1/2 teaspoon chili powder
Fresh cilantro
Preheat oven to 350 degrees F. Spray a 9-inch glass pie pan with nonstick cooking spray.

Cut 3 tortillas into fourths and place around sides of glass pie plate with edges extending 1-inch above edge of pan. Cover bottom of pan with whole tortilla. Sprinkle shredded cheese over tortilla crust. Spread green chilies, chopped onion and chopped tomato over cheese.

In a medium bowl, lightly beat eggs. Stir in sour cream, salt and chili powder. Pour mixture over vegetables in crust. Bake for 40 to 45 minutes or until eggs are set. Remove from oven and let stand 10 minutes before serving. Cut into wedges. Top each serving with salsa and garnish with cilantro, if desired.
