Cheesy Turkey Ham, Spinach and Noodles
- Vegetable spray
- 1 teaspoon minced garlic
- 1 pound 1/2-inch slices deli-cut turkey ham, cut into 1/2-inch cubes
- 1 package (10 ounces) frounceen chopped spinach, defrosted and drained
- 1 cup no-fat cottage cheese
- 2 tablespoons dried parsley flakes
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/3 cup water
- 1 package (6 ounces) no yolk egg noodles, cooked
- 6 tablespoons grated Parmesan cheese
In 12-inch nonstick skillet sprayed with vegetable spray over medium high heat, sauté garlic for 30 seconds. Toss in turkey ham cubes and sauté for about 2 minutes. Add spinach, separating to combine. Reduce heat to medium; stir in cottage cheese, parsley flakes, Italian seasoning, salt, pepper and water. Add noodles; cook until hot, about 2 to 3 minutes. Serve immediately, topping each serving with a tablespoon of Parmesan cheese.
