Cherry Christmas tomatoes are a staple at our 7 fish Christmas Eve dinners. Making them in advance helps with all the last minute prep we have to do for our dinner. These are an easy, no-cook treat.
24 cherry tomatoes, centers scooped out
1 can tiny shrimp, drained, coarsely chopped
12 small pimento olives, chopped
1/2 small onion, finely chopped
1 celery rib, finely chopped
24 celery leaves
1 T soy sauce
Mix shrimp, olives, onion and celery with soy sauce. Cut the top of the tomatoe to create a large opening and scoop out the seeds and liquid. Using a small spoon, stuff each cherry tomato, mounding the top. Cover and refrigerate until served. Just before serving, stick 1 celery leaf into top of each one.
