- 2/3 cup all-purpose flour
- 2 tablespoons sugar
- 3 eggs
- 1/4 teaspoon salt
- 1 3/4 cups milk
- 1 tablespoon butter
- 1 3/4 cups pitted cherries
Preheat oven to 350 degrees F. Sift the flour into a mixing bowl. Mix in sugar, eggs and salt and stir until smooth. Gradually add the milk and stir until mixture resembles a smooth batter. Grease a 10 inch round baking dish with half of the butter. Spread cherries over the base. Pour on the batter and dot with the rest of the butter.
Bake on the center rack of the oven for 40 minutes, or until set in the middle and browned. Serve warm or at room temperature.
NOTE: Any fruit in season can be substituted for the cherries.
