Cherry Tomato and Red Onion Salad

- 2 garlic cloves
- 1/4 cup fresh lemon juice
- 1/3 cup lightly packed fresh basil leaves
- 6 tablespoons extra-virgin olive oil
- Salt and pepper
4 cups red and yellow cherry tomatoes, halved
- 3/4 cup finely chopped red onions
- One 8-ounce package fresh mozzarella cheese, drained, cut into 1/3-inch-thick slices
Chop the garlic in a food processor. Add the lemon juice and basil; process until the basil is finely chopped. With the machine running, gradually blend in the oil. Season the dressing to taste with salt and pepper. Enclose in a jar with a tight-fitting lid.
Toss the tomatoes and onions in a large bowl with enough dressing to coat. Season the salad to taste with salt and pepper. Arrange the cheese on a platter. Top with the tomato salad and serve.
