1-large hen boiled
3-cups of corn meal-selfrising-2eggs-2cups milk 1cup of self rising-flour - mix corn meal flour eggs and milk and--- 1/4 cup of shorting together--bake in greased pan . until it is browned 400 degrees. crumble when cool
6- boiled eggs chopped
1-cup of celery chopped
1 cup of onion chopped
2 -hamburger buns crumbled
4 -slices of white loaf bread crumbled
1- sleeve of saltine crackers crushed
salt and pepper to taste 4 raw eggs beaten
1-can of cream of mushroom soup
/////////////-giblet gravy-//////////////////////////
make giblet gravy to serve over dressing
3 cups of left over stock from hen
pieces of liver and gizzard from hen boiled and chopped
add chopped onion and celery to taste
3 table spoons of browned flour that you have browned with margarine. add to stock and other ingredients. stir to keep smooth . server over dressing can also crumble some of your hen into gravy.
boil hen in 8 cups of water, if it boils low add more water for 2 hrs. when done and tender, remove from heat and cool----.peel boiled eggs chop ----.bake corn bread ---. cool crumble ---add boiled eggs celery onion, crumbled hamburgeg buns , and crumbled loaf white bread,add crushed saltines raw eggs and mushroomsoup and enough of the hen stock to moisten real well. mix all together well. pour into large baking pan or dish, and bake until almost firm in middle. remove from oven.. while you are waiting for dressing to bake slice your hen. serve with dressing.and gibblet gravy---- dressing-bake 400 degrees for 30 mins. turn down to 385 and bake util middle is not firm
