Chicken and Stuffing One-Dish Dinner

2 lb chicken breast
1 small onion chopped
1 tbs butter (divided)
Cooking spray
1 can cream of chicken soup
1 8 oz container of sour cream
1 box of chicken flavored prepared Stuffing mix.
1. Cut chicken into bit-sized pieces.

2. Place in medium-hot skillet with half of the butter. brown each side and cook just till no longer pink.

3. Spray the bottom of a 2qt casserole dish with cooking spray and place the cooked chicken pieces in the bottom of the dish.

4. Use remaining butter to saute onion.

5. Spoon onion over the chicken pieces.

6. In a small bowl, mix cream of chicken soup and sour cream.

7. Spoon sour cream and chicken soup mixture evenly over chicken and onion.

8. Prepare stuffing mix according to packaging directions.

9. Spoon stuffing evenly over sour cram and chicken soup mixture.

10. Bake at 350 degrees with a piece of foil lying loosely on top of pan allowing any steam to be released from pan.

11. Remove foil for the last 5 - 10 minutes of cooking to allow for slight browning.
