Chicken Barley Chili with Black Beans

2 cans black beans (drained)
1 can diced tomatoes (drained)
1 can tomato sauce
1/2 onion (diced)
1 green pepper (chopped)
1 lb. (about 5) chicken tenders
2 tbsp. chili paste
1 1/2 tbsp. chili powder
1/2 tsp. cumin
1 1/2 tsp. garlic powder
1/2 cup pearl barley
2/3 cups chicken broth
1 1/2 tbsp. vegetable oil
1 tbsp. unsalted butter
sharp cheddar cheese (shredded)
Sour cream
green onions (diced)
Cut chicken tenders into small bite sized peiece.

Saute chicken in vegetable oil in dutch oven until fully cooked.

Remove chicken from dutch oven.

Melt butter.

Saute onions and green pepper until tender.

Put chicken, beans, tomatoes, tomato sauce, spices, and 2 cups of the chicken broth back into the dutch oven.

Add more seasoning and talk and pepper to taste.

Simmer for 20 mins on low.

Add barley and cook for 2-3 mins.

Add more broth if necessary.

Cook until barley is tender.

Serve topped with cheddar cheese, sour cream, and green onions.

Really good!
I was looking for a recipe that used barley and found this one. Was really good. I didn't make it exactly like the recipe because I didn't have a few of the ingredients, but did follow it close enough to make a good chili. Husband isn't a chicken fan but he ate 2 bowls!
