Chicken Casserole

My mother makes this recipe when all of the family is together. She usually boils the chicken the day before and debones and chops it to save time in preparation. It is a favorite among our family and can be served on holidays as well
1 (2 or 3 lb) chicken, boiled, deboned and chopped
1 box Uncle Ben's Long Grain Wild Rice with seasoning (cook as directed on box)
1 cup Mayonnaise
1 medium jar diced pimento, drained
1 medium yellow or white onion, chopped
1 can French style green beans, drained
1 can water chestnuts, chopped or sliced
1 can cream of celery or cream of chicken soup

Boil chicken until tender, debone and chop (This can be done the day before to save time in prepration).

Mix all ingredients together, Place in a well buttered casserole and bake at 350 degrees for 30 minutes.

Serve hot and enjoy. A meal in itself served with a green salad and ice tea.

Note: If casserole seems too dry add a little chicken stock before baking.
