Chicken Cherry Jubilee
1 8 oz. can of dark pitted cherries.
1 8 oz. jar of cherry preserves.
1/3 cup of lemon juice.
1 cup chopped celery.
3 tablespoons of Worcestershire sauce.
1 tablespoons of corn starch.
1 tablespoon of allspice.
1 teaspoon each of salt and pepper.
6 chicken breasts.
3 tablespoons of olive oil.
2 cups of uncooked Orzo macaroni.
In a frying skillet, brown chicken breasts in 3 tablespoons of olive oil. Set aside in a dish then cover with tinfoil. In same skillet, combine the juice from the can of cherries, cherry preserves, lemon juice, chopped celery, Worcestershire sauce, corn starch, allspice, salt and pepper and bring to a simmer stirring constantly. (adjust to taste) In a large casserole dish with lid (or baking dish covered with tinfoil) cover the bottom of the dish with the Orzo, and place the browned chicken on top. Then pour the sauce over the top of the chicken and cover. Place covered dish in 375 degree oven and bake for 30 to 40 minutes (depending on size of breasts). Remove from oven and remove lid, then add the cherries (only the juice was used in the sauce). After spreading the cherries over the casserole evenly, put casserole uncovered back into the oven for 15 minutes at 425 degrees temperature. Serve the chicken breasts on a bed of the cooked Orzo.
