Chicken & Corn Vol au Vents

Total Time:  20 Minutes
  4 servings
2 Chicken Breast Fillets
1 can Creamed Corn
Spring Onions
Dried or Fresh Tarragon
1/2 cup thickened Cream
1/2 cup White Wine
1 pkt (4) Meal Size Volauvent Cases
Salt & Pepper
1-1 1/2tsp cornflour to thicken
2tblsp Olive Oil
Put Volauvents in oven to warm

Chop chicken into bite size pieces

Heat Oil in pan,

Put Chicken into pan

Sprinkle with handful of dried or freshly chopped tarragon, salt and pepper

Cook on medium heat stirring until chicken is seared all over

Stir in Creamed Corn, white wine, spring onions and cream,

Turn heat down and simmer 5 - 10 minutes

Mix cornflour with a little water

Add to pan stirring continually until thickened

Remove Volauvents from oven

Place on plate fill with chicken and corn mixture

Serve with side salad or/with Baked Potato
