Chicken in Gravy

~1-2lbs Boneless chicken breast
1/2 - 1 lb mushroons
1 sweet onion
1/2 C frozen green peas
1 - 1 1/2 C chicken broth
1 - 1 1/2 C Greek or European style yogurt
Salt, pepper to taste; 1/4 tsp thyme
Olive oil
--Slice boneless chicken into ~ 1/4" thick slices.

--Toss chicken slices with flour to form a thin coating.

--In a large frying pan or duch oven, heat olive oil until a droplet of water sizzles in the pan. Add the chicken in batches and fry until golden on both sides--~ 5 minutes. Remove the cooked chicken from the pan and set aside.

Add more olive oil and cook the mushrooms~ 5 minutes. Add the onions and saute ~ 2-3 minutes until just translucent but still firm. Stir in chicken broth and scrape up chicken bit from the bottom of the pan. Reduce the heat and stir in the yogurt. Add salt. pepper and thyme.

--Run the green peas under hot water to thaw. Drain the peas and add to the cooking mixture.

--Add the previously cooked chicken and allow peas and chicken to heat through in the mushroom/onion gravy ~ 3-4 minutes. Serve over toast or mashed potatoes or egg noodles.
