3-4 skinless chicken breasts/3 oz. each
1/3 cup butter
1/2 cup madiera wine
1/3 tsp.salt
1/8 tsp.white pepper
1 cup all purpose flour or more as needed
1/4 cup virgin olive oil
1/4 cup heavy cream
1 cup thickly sliced mushrooms
Pour flour into small bowl.

Cut each chicken breast diagonally across into 4 pieces.

Dip into flour and coat.

Saute chicken in olive oil on medium heat.

Cook until done-about 3 or 4 minutes.

Remove and place chicken on plate.

Slice mushrooms thickly and toss into skillet with oil and add butter. Saute for 2 or 3 minutes. Place chicken back into skillet and add wine. Be sure not to spill wine, as it will ignite.

Add cream salt and pepper and reduce for 1 or 2 minutes so sauce is thick,not runny.

Place chicken on plates and pour sauce over top.

Serve with fresh sauteed garden veggies of choice.

Veggies can be sauteed in virgin olive oil, salt and pepper while preparing chicken.

Add a nice salad and enjoy!
