Chicken Marenge

This simple but elegant mediterranean chicken dish smell so good cooking. The combination of the garlic, olives and wine is mouthwatering. Don't forget to soak up every drop of broth with bread.
RECIPE INGREDIENTS
1 whole chicken (cut into pieces)
3 tablespoons olive oil
1 medium onion (coarse chop)
1 cup white wine
1 14 oz. can tomatoes (crushed or diced)
3 gloves garlic (chopped)
3/4 cup green olives (cut in half)
2-3 whole bay leaves
1/2 cup chicken stock
salt
pepper
DIRECTIONS
Wash and dry chicken pieces.


Sprinkle with salt and pepper.


Heat oil in heavy frying pan and brown chicken pieces.


Place chicken pieces in an ovenproof baking dish.


Add onion, wine, tomatoes, garlic, olives, bay leaves to dish. Add stock or water.


Bake in 375 degree oven (uncovered) for 60 minutes. Test chicken for doneness. If using boneless breasts decrease cooking time.


Serve with rice and good crusty bread.
