Chicken Marsala Casserole

I made this when I had this and that in my fridge and no plan for what to make. I wanted to use a chicken breast, but the rest was up for grabs. It might not have been a beautiful meal that I would serve to company, but it sure was tasty
1 tbsp Olive oil
Salt and pepper to taste
½ lb Chicken breasts
¼ cup Onion, diced
½ cup Mushrooms, sliced
1 ½ cups Chicken stock
1 cup Noodles
2 tbsp Marsala
Fresh parsley for garnish

Heat oil in the pan. Sprinkle the breasts with salt and pepper, then brown the chicken breasts in oil and cook until they reach about 155°. Remove the breasts from the pan and cool. Once they are cooled, dice them into 1” pieces.

Place the onion in the same pan and cook until they become translucent. Add the mushrooms and cook until they are soft.

Add in the chicken stock, uncooked noodles and marsala. Cook for about 10 minutes or until the liquid is almost absorbed in the noodles. Add the diced chicken back into the pan and cook until liquid is absorbed and noodles are soft.

Garnish with parsley, if desired.
