Chicken Mushroom Casserold

Total Time:  45 Minutes
A high protein, low fat vegetable dish with added whole wheat.
RECIPE INGREDIENTS
1 can low fat cream of chicken soup
1 1/2 Cups cooked, deboned chicken
1 cup peas, canned drained or frozen thawed
1 small can of sliced mushrooms
1/2 tsp poultry seasoning
1 egg, beaten
1/2 cup milk
1 cup baking mix
Salt and pepper to taste
4-6 thin wheat snack crackers, finely crumbed
DIRECTIONS
Mix soup, chicken, peas, mushrooms and seasonings. Put in baking dish. (I use a 7 x 81/2 x 2/12 oval casserole) Mix egg, milk and baking mix until smooth. Pour over chicken mixture, sprinkle with cracker crumbs. Bake at 400 for 30 minutes. Good served with cornbread or with cottage cheese for additional protein.
