Quick and Easy Chicken One Pan Wonder
2 boneless chicken breasts chopped
1 cup white rice
2 cups of water
1/4 cup diced onion
3 tablespons olive oil
choice of fresh vegetable (green beans,broccoli, asparagus, zucchini, etc.)
1 tablespoon of butter/margarine
salt & pepper to taste
In a covered skillet (glass top preferred), heat 3 tablespoons of olive oil on medium, add onion and saute until translucent. Add Chicken and cook through. Add water and rice and stir. Raise stove top to high. When water comes to a boil, rest vegetable on top of other ingredients in pan. Add salt & pepper. Add butter to top of vegetables and cover with lid. Reduce heat to low. Cook until rice is done and water absorbed and you have a quick, tasty one pan wonder. Bring the pan to the table for easy serving.

Made but transformed...
I made this dish this evening, however I added 1T Lemon Juice, 1t Thyme, 1t Garlic Salt, & 1/2t Garlic Powder. Instead of just one veggie I put in the diced carrots with the onion and added peas on top as directed. SO, it was kinda like Beef Fried Rice without the Beef & egg. It was quite tasty. You should try it. Very simple. Very quick! Would be great for the cook who is also a bread winner and wants more time in the evenings!!
