Chicken Paella / Chicken Casserole

Chicken Paella for a crowd. This dish is easy and absolutely delicious. My kids love it and so do all their friends! Easy to make for a party of people and also for a normal weeknight meal.
Olive Oil
2 split chicken breasts
1 pkg. chicken wings or drumsticks (your preference)
1 sweet red pepper cut into bite size
2 zucchini sliced about an inch thick
1 medium sweet onion chopped
2 cloves garlic finely diced
1 cup of rice
2 ears of corn, remove niblets
5 links sweet italian sausage, casing removed
3 cups chicken stock, heated
Salt and freshly ground black pepper
Heat oil in a large skillet. Salt and pepper the chicken and brown on all sides. Set aside.

Add pepper, zucchini, onion and garlic to the pan and saute until almost soft. Set aside.

Add a little more oil to the pan and saute the rice, then add the corn. Set aside.

Break sausage up into the pan in bite size pieces and saute until brown. Drain off excess grease.

In a large casserole or paella dish, layer the vegetable and rice/corn mixture on the bottom. Scatter the chicken pieces and sausage. Pour stock over the ingredients.

Bake uncovered at 375 F for 1 hour.

Serve with crusty bread.
