Chicken Pasta Salad

RECIPE INGREDIENTS
Finely chopped red onion 1/3 cup
Finely chopped celery 1/2 cup
Cooked Chicken, 1/2 in. dice 1/2 cup
Mango Chutney 3 Tbsp
Mayonnaise 2/3 cup
Pasta, rotini or bow ties 1 cup uncooked
Curry Powder or to taste 1/2 tsp
Parsley - chopped 1/4/ cup
Salt, pepper to taste
Paprika for garnish
DIRECTIONS
Marinate and cook chicken breasts, cool and dice (or use left over cooked chicken). Cook pasta, drain and cool.


Mix curry powder and chutney with mayo. Add onion, celery,chicken and mix. Add pasta and mix. Adjust mayo as needed. Serve on a base of mixed salad greens. Garnish with parsley and a sprinkle of paprika
