REFRESHING ALTERNATIVE TO A HEAVY MEAL.
RECIPE INGREDIENTS
2-large chicken breasts cut in 1/2 inch strips
l-small head of lettuce
1- small bunch of red leaf lettuce
1- small head of butter lettuce
1- bunch spinach
( or if you prefer 1 bag of purchased mixed spring lettuce.)
1- container of blue cheese crumbled.
2- roma tomatoes diced
1- cucumber diced and seeded
1- small jar of black olives, chopped
l-green pepper diced
l/2 c.french-fried onions for crunch
1/2 c.balsamic vinegar
1/4 c. olive oil
1/4 c. fresh chopped basil
DIRECTIONS
Saute chicken in 2 tbsp. olive oil until firm and lightly browned.


Chop lettuce and place in large salad bowl.


Add diced vegetables and toss.


Mix vinegar and oil with with wisk, add seasonings to taste. Toss. Chill until chicken is prepared.


Serve in individual salad bowls.


Add chicken on top of salad. Do not stir in.


Add chopped basil, blue cheese and french-fried onions.


Serves 4. Enjoy
