Strip steaks stuffed with the fabulous flavor of chilies.
- 4 strip loin steaks or 1 pound top sirloin steak, 1-inch thick
- For the Stuffing:
- 1 tablespoon olive oil
- 2 cans (4 ounces each) diced green chilies
- 4 medium cloves garlic, minced
- 1/4 teaspoon dried oregano leaves
- 1/4 teaspoon black pepper
- 4 teaspoon fresh cilantro, minced
- For the Rub:
- 1 teaspoon black pepper
- 1 teaspoon garlic salt
- 1/8 teaspon cayenne pepper (optional)
Cut a horizontal pocket in each steak to prepare for stuffing.
TO MAKE STUFFING:
Heat the oil in a nonstick skillet over medium heat. Add the green chilies, garlic, oregano and pepper. Cook, stirring, 4 minutes. Remove from the heat and add the cilantro.
Stuff each strip steak with one-fourth of the chili mixture.
Lightly season both sides of the steaks with the rub mixture. Grill the steaks 4 to 6 inches over coals for 12 minutes total, turning once.
