Chili Beef & Swiss Chard Soup

A hearty soup brimming with nutrition - and perfect for fall lunches. Freezes well.
1 ½ lbs lean ground beef (or eq. amt. of stewing beef, chopped)
2 TBSP olive oil, divided
1 medium onion, diced
1 stalk celery, diced
2 cloves garlic, crushed
¼ tsp coriander
1 tsp oregano
1 tsp basil
1 TBSP chili powder (or to taste)
1 box beef bouillon, reduced salt
2 cubes beef bouillon
1 large can stewed tomatoes
1 small can tomato paste
1 can red kidney beans, drained and well rinsed
1 bunch swiss chard
salt & pepper to taste

Saute onion and celery in 1 TBSP oil until just tender; remove and set aside

Gently brown the beef in the other TBSP of oil – seasoning with salt & pepper; add onion and celery back into pot

Add garlic - stir

Add tomatoes and tomato paste - stir

Add spices – stir

Adjust seasoning with salt & pepper

Remove tough stems from swiss chard and chop the leaves into pieces roughly 1 to 1 1/2 inch square

Add chopped swiss chard and kidney beans - stir

Simmer until ready
