1 lb lean ground beef
1- 8 oz tray sliced mushrooms
2 – medium onions – chopped
1 green pepper – chopped
1-cup – chopped celery
2 ml chopped garlic
Salt and pepper to taste
75 ml chili powder – increase or decrease to taste
1 – 28 oz tin diced tomatoes
1 – 28 oz tin pasta sauce
3 – 19 oz tins kidney beans

On medium high, heat 12 liter pot with 2 tbsp oil

Brown mushrooms, onion, green pepper and celery for 5-7 minutes-stirring often

Add salt, pepper, garlic and chili powder

Add lean ground beef and continue stirring until meat is brown

Add tomatoes, sauce and beans

Bring to a boil and reduce heat – simmer for 1 hour


-Ground chicken, pork, turkey, sausage meat or browned ground tofu instead of

lean ground beef

any 3 tin combination of red or white kidney beans, romano, pinto or black beans

Make a day ahead – better flavour – Great with tossed salad and garlic bread

New Twist – to 4 cups of chili add 2 cups cooked macaroni or 2 cups cooked rice

Mix into baking dish, sprinkle with grated cheese and bake in 350 degree oven for 30 minutes
