Chili Stew

This twist on chili is complimented by the maple bacon and actually tastes more like a smokey stew.
4 strips Maple Bacon chopped
1 medium onion chopped
1 red or orange bell pepper chopped
1 cup chopped Baby Bella Mushrooms
1 pound ground white meat turkey (99% lean)
1 pound ground beef (93% lean)
1 can diced tomatoes
1 can cannelini beans, rinsed
1 can black beans, rinsed
1/4 cup canned chopped green chilis (more can be added if you like it spicy)
2 tablespoons Smoked Paprika
1/4-1/3 cup Chili Powder (depending on the level of spice)
Salt and Pepper to your taste
1/2 cup shredded cheddar or monteray jack cheese
Saute bacon on medium heat in large pot until crispy. Remove bacon and set aside. Saute onion, peppers, and mushrooms in bacon fat until tender. Add ground turkey and ground beef. After meat is browned and cooked through, add diced tomatoes, beans, chilis, paprika, chili powder, salt and pepper. Stir all together, cover, and simmer on low for 2-3 hours. Serve hot and top with shredded cheddar or monteray jack cheese.
