Chocolate Black Bean Soup

Unconventional twist on traditional Black Bean soup...
8 oz. dried Black Beans (prepared)
4 - Tbls. EV Olive oil
1 - Medium Onion (chopped)
1 cup Celery (course chopped)
1/2 - Tsp. Cumin
1 - Tsp. Oregano
4 - Gloves Garlic (Chop Fine)
1/4 - Tsp. Crushed red peppers
2 - Tsp. Beef Bullion powder
2 - Cups Hot Water
1 - Tbls. Chilli powder
1 - Tbls. Hot Sauce (Franks Red Hot - Preferred over Tabasco) Add more to suite your taste.
2 - Tsp. Sugar
2 - Tbls. Hershey Chocolate powder
Sour Cream
Chives (or raw chopped onion)
Prepare the beans accordingto the package directions.

Once the beans have gone through their par boil, drain - Retain all liquid! (Beans should be Al Dente.)

In a large sauce pan (6 Qt.) over medium high heat add Olive Oil.

Sautee Onions, Garlic and Celery until onions are just about clear.

Add Cumin, Chilli Powder, Oregano, Crushed Red Peppers and Hot Sauce. (Stir)

Add Liquid from the beans and mix toghther. Bring to a simmer.

Add prepared Beans and bring back to a simmer. Simmer for one hour.

Add Chocolate powder and sugar.

Prepare Beef Bullion Powder and Hot Water and add to the sauce pan.

Bring to a rolling boil, uncovered, for 1/2 hour... (Until beans are tender.)

Let stand 10 Min. then Ladle into soup bowls, add a tablespoon of sour cream, top with chives or onion, and serve.
