This is the 'real deal' Italian ice--refreshing and light, dairy-free, fat-free, perfect for a hot summer day.
1 cup sugar
2 1/2 cups water
1/3 cup unsweetened cocoa powder
1/8 tsp. cinnamon
1. Boil sugar and water together in a small pot, and simmer for five minutes. Remove from heat.

2. Immediately add cocoa and cinnamon. Mix well. Let cool a bit, refrigerate until cold (40 degrees or lower).*

3. Churn in an ice cream maker per manufacturer's instructions. Serve immediately or freeze to serve later.

*(You can chill this down faster by putting in freezer for all or part of the time--but be sure to monitor it--you do not want it to freeze, you just want it to chill!)
