This quick and easy cake is a real crowd-pleaser and takes just minutes to make! If you don’t have a Bundt pan, a 13 X 9" pan will do. (but reduce the baking time by ten minutes!)
RECIPE INGREDIENTS
1 package chocolate cake mix  (~18 1/4 ounces)
1 4-ounce package instant chocolate pudding mix
2 cups sour cream
5 large eggs
1 cup unsalted butter, melted and cooled to room temperature
1 teaspoon of almond extract
2 cups chocolate chips

Mix first six ingredients until completely blended. Add chocolate chips and finish blending.

Immediately place in prepared Bundt pan. Place in oven and cook for 50 to 55 minutes. Cool ten minutes before removing from pan.

Just made this recipe with a few alterations. Used a cake mix that already had the pudding in. Was also concerned about the calories, so used 2, 8-inch cake pans and 12 cupcake tins to adjust the portion size and stretch this recipe. Worked out great. I can freeze the two layers for later use, and frost these with some lower cal alternatives if I want. The original rec serves 12, but I plan on using only one layer at a time, splitting them and filling with rasp preserves and lo-cal whipped topping. So I think I can get a total of 12 cupcakes and two 8 serving tortes out of this. Who needs a 600 calorie dessert! I will definetly make this again and possibly swap out some lo-cal ingredients like egg whites, low fat sour crm, and lo-cal (smart balance) butter...
