- 6 cups powdered sugar
- 1 cup butter
- 2 cups peanut butter
- 1 teaspoon vanilla extract
- 2-3 cups semisweet chocolate chips
- 2-3 squares unsweetened baking chocolate
In a medium bowl, mix together the sugar, butter, peanut butter and vanilla. The dough will be loose. Form 1- to 2-inch balls from the dough. Refrigerate the balls for 30 minutes to 1 hour.
In a double boiler, melt the chocolate. Using a toothpick or fork, dip the balls in chocolate. Set on wax paper and cool.
Tip: For a little added crunch, crumble potato chips or pretzels in a plate and roll the freshly covered balls of chocolate.
