Chocolate Sundae Pudding Cake

  • 1 cup flour
  • 2/3 cup plus 1/4 cup sugar, divided
  • 5 tablespoons unsweetened cocoa powder, divided
  • 2 teaspoons baking powder
  • 1/4 teaspoon plus 1/8 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup chopped nuts
  • 2 tablespoons butter or margarine, melted
  • 2 teaspoons vanilla, divided
  • 1/2 cup packed brown sugar
  • 1 cup boiling water
  • French vanilla ice cream


Preheat the oven to 350 degrees F. Grease four to six 2-cup ramekins. Set aside.

In a large mixing bowl, stir together the flour, 2/3 cup sugar, 2 tablespoons cocoa powder, baking powder and 1/4 teaspoon salt. Set aside.

In a small mixing bowl, stir together the milk, nuts, melted butter and 1 teaspoon vanilla. Add to the dry ingredients and stir to combine. Pour into the prepared ramekins.

In another bowl, stir together the brown sugar, 1/4 cup sugar, 3 tablespoons cocoa powder, 1 teaspoon vanilla and 1/8 teaspoon salt. Sprinkle the mixture evenly over the batter. Pour the boiling water evenly over each ramekin. Bake 30 minutes. Serve with vanilla ice cream.
