Chorizo, Roasted Pepper and Smoked Mozzarella Frittata

RECIPE INGREDIENTS
8 eggs beaten with a little milk or cream
1 tbsp olive oil
1-lb chorizo sausage (sliced or diced)
3 roasted red/green/yellow or orange peppers chopped
1/2 lb. smoked mozzarella diced
DIRECTIONS
Pre-heat oven to broil.


Heat oven safe skillet, add 1-tbsp of olive oil, when sizzling, add chorizo and saute until slightly browned.


Add roasted peppers, then eggs. Continue to cook until bottom is set, then transfer skillet to broiler for 30 seconds (watch carefully to ensure frittata does not burn).


Slice into wedges and serve with oven roasted potatoes.
