Christmas Cake (Carrot Cake)

This Christmas or (Carrot) Cake is a no fuss easy to bake cake that has great flavor and is very moist. It's not heavy like most carrot cakes . The Cream Cheese Frosting completes it. Enjoy!
2 cups sugar
4 eggs
1 cup oil
3 small jars of strained carrots (see note bottom)
1 or 2 grated carrots
1 cup drained, crushed pineapple
2 cups flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. vanilla
1 cup chopped walnuts
(note: I use organic baby food)
1/2 cup margarine
8 oz. cream cheese
1 box confectioners sugar
drop of milk
1.Beat eggs and sugar together

2.Add oil

3.Add jars of carrots, grated carrots, and pineapple, blend.

4.Add flour, baking soda, salt, and cinnamon which have been sifted together; blend

5.Add vanilla, and walnuts, mix

6.pour into a greased 9x13 inch pan

7.Bake at 375 degrees for 40 minutes


1.Cream together the margarine and cream cheese

2.Add confectioners sugar and milk

3.Beat until frostings is spreading consistency.
