This is the best part of Christmas Day, this classic British cake meant only for Christmas is brilliant, and needs making 2 months beforehand!
1 1/2 sticks (6oz)  Margarine,
3/4 cup      (6oz)  Soft dark Brown Sugar,
3 Eggs,
2 cups       (8oz)  Plain Flour,
1 1/4 cup    (8oz)  Currants,
1 1/4 cup    (8oz)  Rasins,
1 cup        (6oz)  Sultanas,
1/2 cup      (2oz)  Glace Cherries,
1/2 cup      (2oz)  Almond Meal,
1 tsp               Ground Mixed Spice,
2 tbsp              Dark Treacle,
1 Packet Ready Roll Icing,
1 packet Yellow Marzipan,
1 tot Brandy.
Christmas Cake Recipe at
Cream the fat and sugar together. Add eggs one at a time. Add the flour to the mix. Once fully combined add all the fruit and nuts. Once combined add the spice, treacle, and a tot of brandy. Put in a greased and lined 8' tin. Cook at 130 or Gas 1, preferably in mid-October, no later, for roughly 1 1/2 - 2 1/4 hrs, keep in airtight container.

In mid December poke holes in the top of the cake with a skewer and pour 1-2 tbsp of brandy in to moisten the cake. Then a day or two later coat with the marzipan, then the ready-roll icing.
