While great on its own, either hot or cold, you can serve this Brazilian-style shrimp dish over rice or noodles for a more substantial meal.
- 1/2 cup very thinly sliced red onion
- 1/2 cup thinly sliced red bell pepper
- 3 garlic cloves, minced
- 1/4 cup lime juice
- 1/4 teaspoon salt, plus more to taste
- 2 dashes hot sauce
- 2 tablespoons olive oil
- 2 pounds large shrimp, peeled and deveined
- 2/3 cup chopped cilantro, plus more for garnish
- Freshly ground pepper, to taste
In a medium bowl, toss together the onion, bell pepper, garlic, lime juice, salt and hot sauce and let marinate for 15 minutes.
In a large sauté pan over medium-high heat, heat the olive oil. Add the onion and bell pepper mixture, the shrimp, and 2/3 cup cilantro. Sauté until the shrimp are just cooked through, about 5 to 7 minutes. Season to taste with salt and freshly ground pepper.
