Cincinnati Chili

Cincinnati Style Chili is "Greek" not like Texas style or not extremely hot. Do not brown the large pan needed,
Cincinnati Chili Recipe
2 lbs. ground chuck (DO NOT BROWN!)
2 med. Or large onions –chopped
29 oz. can of tomato sauce
29 oz. water (use the can to get the same amount of water as sauce)
Simmer this for 30 mins. While preparing the remainder of spices…..
½ tsp red pepper                                                     ¼ tsp. garlic powder
¼ tsp ground cloves                                               4 heaping tablespoons Chili Powder
½ oz. of unsweetened chocolate (Baker’s squares)   1 tsp. cumin
2 tablespoons of vinegar                                         2 tsp. Worcestershire sauce
1 bay leaf                                                                2 tsp. cinnamon
½ tsp allspice                                                          1 ½ tsp salt
4 to 8 drops of Tabasco sauce
Add all ingredients into pot and cook on low heat or simmer for 2 to 3 hours
• Serve as chili, or over spaghetti.  3-Way or 4-Way is chili over spaghetti with onions and finely grated cheddar cheese.
• Coney Island or Cheese Coney --- hot dog on bun with drizzle of reg. mustard, add chili, onions, and grated cheddar cheese. Do not put too much chili on the bun or you will not be able to pick this up to eat.  Tabasco sauce may be added to the top for extra spicy flavor.
Place all ingredients in a large pot over low/ med. heat. Simmer for 2 to 3 hours. Chili may be served in a bowl with chili crackers or over spaghetti with grated sharp/ cheddar cheese and onions. Cheese Coney or(chili dog down south) bun, hot dog,drizzle of yellow mustard, chili, onions, and grated cheese on top.
