Citrus Chicken Skewers with Sour Cream-Horseradish Sauce

This is usually served as one skewer an appetizer, but it's equally good served as a main dish. For that double or even triple the recipe.
RECIPE INGREDIENTS
2 cups orange juice
1/4 cup lime juice
2 tablespoons ancho chili powder
2 cloves garlic, coarsely chopped
8 chicken thighs, skinless and boneless, cut into 1-inch cubes
Kosher salt
Bibb lettuce leaves, for serving
1-1/2 cups Daisy sour cream
3 tablespoons prepared horseradish
1/2 teaspoon salt
1/4 cup chopped fresh parsley or cilantro leaves
Wooden skewers, soaked in water for 1 hour
DIRECTIONS
Whisk together the orange juice, lime juice, chile powder, and garlic in a non-reactive large baking dish. Add chicken cubes and turn to coat. Cover the chicken and refrigerate for 4 to 6 hours or overnight.


For sauce, in a bowl combine sour cream, horseradish and salt. Mix well, cover and refrigerate until serving time.


Prepare a charcoal or wood fire and let it burn down to embers, or preheat the broiler. Thread the equivalent of 1 chicken thigh onto a skewer, leaving 1/4-inch space between each cube. Season to taste with salt and grill or broil for about 3 minutes on each side, or until cooked through completely. Place each skewer in a Bibb lettuce leaf, drizzle with Sour Cream-Horseradish Sauce, and garnish with chopped cilantro or parsley.
