Clay's Key Lime Cream Pie
RECIPE INGREDIENTS
For Crust:
1 - 10 oz Box of lemon waffer cookies.
1/2 cup of macadamia nuts
4 Tablespoons of (Key lime Sugar)
1 Square of butter melted
1/3 cup of shredded coconut
For the Filling:
2 - 14 ounce cans of sweetened condensed milk
6 - eggs yolks
1 - cup of fresh key lime juice
1/2 cup of sour cream
Cream Topping:
1 - pint of whipping cream
2 Tablespoons of key lime sugar
4 Tablespoons of powered sugar
DIRECTIONS
The first thing you will have to do is get real Key Limes. It won't be the same if you take the easy way out with bottled Key lime Juice.


1. After getting Key limes, You must have enough to make 1 cup of lime juice (25 - 30) key limes


2. Food Processor- Making Key Lime Sugar. Add 1 1/2 cups of sugar in food processor with all the key lime zest added to it. This will make a nice key lime scented sugar when blended. All the oil from the zest goes into the sugar. If you can also get - Pure Key lime oil - I get mine from Kermits of Key West Floridia. I add about 6 - 8 drops into sugar.


Crust:


Food Processor: add 1/2 cup of macadamia nuts with about 4 Tablespoons of key lime sugar. Pulse nuts until fine corse texture. Take out nuts and add to bowl. Add box of lemon waffer cookies - pulse until a fine corse texture - add to bowl. Add shredded coconut and melted butter. Incorporate mixture and press into pie plate. Bake crust at 300 degree for about 10 - 15 minutes. Allow to cool.


Filling:


Whip 6 egg yolks, sweetened consensed milk along with about 2 Tablespoons of key lime sugar for zest until light and fluffy. Add key lime juice. This is where my recipe is different from others. I do not put my filling in the oven but in a double boiler and cook filling until 180 degrees. I allow the filling to cool and then I whip the sour cream into the filling. I like to add a little shredded coconut to the bottom of the pie before folding filling into crust. Let set overnight.


Cream Topping:


Add to cream 4 tablespoons of powdersugar along with 2 tablespoons of key lime sugar. Whip cream and fold onto pie. Decorate with Key limes.


** For a added difference you may also like to have a layered look with key lime juice, sugar and gelatin. Pour key lime gelatin over pie filling and allow to set. Once set add whipped cream cheese, key lime sugar and fold over key lime gelatin. Allow to set. Then fold whipped cream over layers. Enjoy!!!
