This recipe came from a church cookbook. I have been making these for years. If you like cocoanut you will like these.
RECIPE INGREDIENTS
1/2 cup soft shortening (I have used butter, margarine or shortening)
1/2 cup brown sugar
1 cup flour
Topping:
2 eggs beaten
1 cup brown sugar
1 teaspoon vanilla
2 tablespoons flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup mosit cocoanut
1/2 to 1 cup chopped nuts (I use walnuts or pecans)
DIRECTIONS
Cream the 1/2 cup shortening and 1/2 cup brown sugar. Stir in the 1 cup of flour until well blended.


Press into botton of ungreased 9 x13 inch pan. (you will have to use you hands to press this to cover the bottom of the pan)


Bake 10 minutes at 350 degrees. Remove from oven.


Combine all of the topping ingredients mix well and pour over the hot crust layer. Return to the oven and bake 25 minutes more until topping is golden brown.


Let cool and cut in to bars.
