Comfort Macaroni and Cheese

RECIPE INGREDIENTS
4 TBSP butter plus extra to grease pan
1/3 cup flour
1/2 cup cottage cheese
2 cups whole milk
1/2 lb Velveeta cheese
1/2 cup sour cream
1 lb elbow macaroni
1 cup shredded cheddar cheese
Salt and pepper to taste
DIRECTIONS
Preheat oven to 350.


Butter 3 quart casserole pan.


Cook macaroni, drain, and set aside.


Melt butter.


Sprinkle in flour, stir until absorbed.


Slowly pour in milk, stirring constantly.


Reduce heat and add Velveeta, stirring until melted.


Stir in cottage cheese, sour cream, salt, and pepper.


Place macaroni in pan and fold in cheese sauce.


Cover and bake for 25 minutes.


Uncover, sprinkle shredded cheese and bake 10 more minutes, until cheese melts.


Remove pan from oven and let rest for 15 minutes.
