Corn and Malunggay

A comfort soup. The sweet taste of fresh young corn plus the whole nutrients of the malunggay gives you a comforting sip....
4 cobs fresh young yellow corn - scrape from cob
1 cup malunggay leaves - remove from stems
1 med size onion - thinly slice
1 clove garlic - minced
1/2 size of matchbox ginger - thinly slice
5 cups of water or chicken broth
salt and pepper to taste
Mashed corn with a pinch of salt set aside.

In a casserole boil the water, onion, ginger and garlic.

Pour in corn but this time continue stirring for about 5min or until bubbles start to appear.

Then lower the fire and continue boiling for 10 minutes before adding the malunggay leaves.

Simmer for another 3 minutes.

Add salt and pepper to taste.

Serve hot. (optional you can top it with crispy garlic)
