Corn Cheese Biscuits

Makes 6 biscuits
- 1/2 cup cornmeal
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 tablespoons unsalted butter or margarine, softened
- 1 egg, lightly beaten
- 1/2 cup milk
- 1/2 cup finely grated Jack or Cheddar cheese
Preheat the oven to 400 degrees F. Lightly butter or oil a 6-cup muffin pan and set aside.
In a bowl, combine the dry ingredients. Work in the butter or margarine until the mixture resembles coarse crumbs.
Stir in the egg and milk until just blended, then stir in the cheese. Pour the batter into the prepared muffin pan, and bake for 20 minutes.
Cool in the pan for 3 to 5 minutes and serve warm.
