Corn Fritters

RECIPE INGREDIENTS
1 can of whole corn-drained
1 cup all purpose flour
1 tsp baking powder
1 egg – separated
Vegetable oil
DIRECTIONS
Blend completely all ingredients except the egg white. Beat the egg white until fluffy. Gently fold the egg white into the corn mixture.


In large skillet, heat oil over medium high heat until it is hot, spoon the corn mixture into the skillet and cook for about 2 – 3 minutes or until golden brown; then flip and brown the other side. Serve hot with lots of butter.
