Corn in Coconut flan

This delectable dessert blends the richness of the coconut, the sweetness of the corn and the texture from its coconut toppings.
1 can cream-style  corn
1 cup white sugar
1 cup cornstarch
1 tall can evaporated milk
2 cups coconut milk (If using fresh coconuts, set aside coconut shavings after extracting the juice to use for toppings)
1 cup coconut milk or coconut shavings (juice has been squeezed out), sugar to taste
1. In a pan, combine sugar and cornstarch together. Add evaporated milk and coconut milk slowly. Lastly add cream style corn. Mix until all the cornstarch is dissolved. Cook over low fire, stirring until thick.

2. Pour on a rectangular pyrex dish and let cool to set.


1. If using coconut milk, cook coconut milk until milk curdles and is brown in color.

2. Strain curdled coconut milk from its oil.

3. Sprinkle on curdled coconut on top of the flan.

1. If using coconut shavings, just toast coconut over low heat, when brown, mix with little sugar to taste and sprinkle on top of the flan.

Serves 6-8
