Corn Julio or Jalapeno Corn

I got this recipe from a friend in Texas, but I kicked it up a notch.
1 8oz softened cream cheese
2 cans of corn – one Mexican and one white corn (you could have 3 cans)
3 Tbs butter
1/4 Cup Half and Half
1/4 Cup of liquid from Jalapenos or more to make it spicier
2 Cups Shredded Cheddar Cheese
Crushed potato chips, Frito's, cracker or bread crumbs
Bag of Scoop Tortilla chips
Other possible additional ingredients:  Crab Meat, Beans (black or kidney), chopped peppers of choice, black olives for garnish.  The possibilities are endless.
Multiply ingredients for larger parties.
Great as a side dish, but most people eat it as a dip.

Mix Cream Cheese, Butter, Half and Half and Jalapenos juice until well mixed, mix in Corn.

Pour into a baking dish add Cheddar Cheese on top and then add crushed chips a top.

Bake at 350 for 30min. or until cheese is melting and bubbling.

Garnish with Paprika and Jalapenos, bowl of Tortilla chips for dipping, now dig in! Yummmy
