Corn Pie

This is a VERY OLD Pennsylvania Dutch farm recipe.
pie crust for top and bottom (make your own or buy)
6 cobs corn
4 hard boiled eggs
salt and pepper
sugar (optional).
Prepare pie pan with bottom crust. Pierce the crust with a fork to prevent bubbles and do a quick bake in oven for about 10 minutes at 350 degrees.

Peel corn and wash. Remove corn from cob. Put into pie crust. Slice the hard-boiled eggs and place on top of corn. Dot with butter. Season with salt and papper. Add about 1/2 tsp of sugar.

Add milk to about 1/2" of top. Cover with top crust. Be sure to place slits in crust. Brush crust with milk and sprinkle with kosher salt if desired.

Bake at 350 degrees until pie crust is golden brown (about 35 to 45 minutes). Remove from oven and let sit for about 10 minutes before serving.

Some people like extra "gravy" made from butter and milk to pour on top.
