Corn Pudding
RECIPE INGREDIENTS
1/4 C. Butter
1/4 C. Flour
tsp. salt (for Taste)
1 1/2 T. Sugar
1 3/4 C. Milk
3 C. Frozen Corn (chopped opt.)
3 Eggs (beaten until frothy)
DIRECTIONS
Melt butter in sauce pan, stir in flour, salt and sugar.


Cook until bubbily, add milk and cook until thick.


Stir in the corn. Stir in the eggs that have been beaten,


until frothy. Pour into a well buttered 3 quart casserole dish.


Place casserole dish in pan of hot water in the oven at 350 degree.


Bake about 45 min.


Note: You may use either chopped or whole corn. The chopped makes for a smoother pudding.

Best one of all...I tried six
This was by far the best corn pudding I tried! Yummy pudding, just like custard. Since the woman was from NM I realized she was higher altitude. So I watched the cooking time It cooked in a bit less time here on the east coast than it did when I lived in Santa Fe. BEST!!! My husband added pepper at the table. I didn't think it was needed! KIDS LOVED THIS!
