I tried this recipe one Sunday and my family loved it so much I ended up making it three Sundays in a row. It's yummy anytime, but it's especially nice in the summer.
RECIPE INGREDIENTS
4 cans (15-oz each) whole kernel corn, drained well
2 cups grated cheddar cheese
1 cup mayonnaise
1 green bell pepper, finely chopped
3/4 cup sweet onion,such as Vidalia, finely chopped
1 bag Chili Cheese Fritos, crushed
DIRECTIONS
Mix together the first five ingredients; chill. Just before serving stir in crushed Fritos, or I prefer to pour the Fritos in a separate bowl and let people add them when they dish up their plate (they tend to get soggy and can ruin really good leftovers!)
