Corn salsa with chips, tacos or burritos
1 cup fresh corn +2 tablespoons of water or scrape the cob to get the "juice" to equal 2 tablespoons.
1 finely chopped jalapeno pepper (remove seeds and veins)
1/4 cup finely chopped onion (whole or green onions)
1 tsp minced garlic
3 paste tomatoes/or 2 medium tomatoes chopped and drained
1 teaspoon white vinegar/lime juice/lemon juice (either will work)
Salt, pepper, garlic powder to taste
2 tsp olive oil (or vegetable oil)
Cheese of your choice for topping
Chips - corn or flour tortillo chips
Cilantro, basil, parsley OR oregano for Italian flavor.
Dash of favorite hot sauce if you like it hot.
Dice tomatoes, set aside to drain.

Cut corn off cob to make 1 cup +2 tablespoons water or corn "juice" to equal 2 tablespoons (substitute canned or frozen corn.)

Saute jalapeno, garlic and onion in oil for about 3 minutes or until tender.

Add salt, pepper and garlic powder to taste.

Simmer corn for 10 minutes, add tomatoes after draining and the sauted vegetables. Simmer for 5 minutes. Serve hot with your choice of chips.

If adding optional ingredients, saute with the vegetables.

Top with cheese of your choice.

This is a recipe you can add lots of different veggies to, and it still tastes great!! We use this as a "base" and add or substitute what we like or have available from the garden. It works well with tacos and burritos.
