Corn-Zucchini Bake

This easy to prepare vegetable casserole tastes great as warmed up leftovers the next day.
RECIPE INGREDIENTS
3-4 medium zuchini
1/4 cup onion, chopped
1Tbs. unsalted butter
2 large eggs, beaten
1(10oz.) frozen corn, cooked & drained
1 cup Swiss cheese,shredded
1/4 tsp. bread crumbs
2Tbs.Parmesan cheese,grated
1Tbs. unsalted butter, melted
DIRECTIONS
Wash zucchini and cut into 1 inch slices


Cook zucchini until tender then mash with a fork or potato masher


Drain any excess liquid off zucchini


Add eggs, corn, Swiss cheese, salt, onions that were sauted in butter


Grease a 3-quart casserole dish


Pour mixture into pan


Saute bread crumbs in butter until golden brown


Top casserole with crumbs and grated Parmesan cheese


Preheat oven to 350 degress and bake for about 40 minutes or until a knife comes out clean
