Corn/Black Bean Salsa

Sweet Corn/Black bean salsa or side dish!
5 med ears Corn (freshly cut from the cob)
1 can black beans, rinsed and drained
1 med red onion chopped fine
1 med sweet red pepper chopped fine
1 med bunch of cilantro chopped
2+ TSPS balsamic vinegar or to taste
1/2 tsp ground cumin or more to taste
1/2 freshly squeezed lime
Optional: Hot Peppers of your choice.
Note: this is more of a sweet salsa not a hot salsa, but you can add hot peppers if you wish to give it a sweet and hot taste. Do not add too much hot pepper as they tend to drown out the other flavors.
Cook corn, let cool and cut from cob.

Place all ingrediants in bowl and stir.

Let sit for about 30 minutes in frig.

Take out of frig and stir.

If you find it a little dry you can add more vinegar.

Taste and add any extra ingrediants to taste.

I use this as a side dish as well as serve with corn chips as a snack.

This is also good in a pita pocket sandwich.
